What I usually do is make extra servings when I cook dinner and pack it for lunch or have it for dinner the following night too. For me food preparation was the biggest challenge. I buy everything needed for a salad and chop it all up at the beginning of the week and keep it in tupperware in the fridge. This lasts for 5-7 servings for me. When you go food shopping try to prepare/proprtion your foods before storing them in the fridge/cabinet. This saves lots of time. I find it is also much easier to grab for something healthy on the go when you don't have to prepare it. Taking 15-30 minutes each night to prepare yourself for the following day makes all the difference in the world. Once you get into a routine it's not as difficult. Good Luck!!
