Key Lime Pie

Ingredients: 

  

1  Reduced Fat Graham Cracker Pie Crust 

1 pkg. (4-serving size) sugar-free lime-flavor jello 

1/4 c. boiling water 

2 containers (6 oz.) key lime flavor,  light yogurt 

1 tub (8 oz.) fat-free whipped topping, thawed 

  

1.  In large, heat resistant bowl dissolve jello in boiling water.  Stir in yogurt with wire whisk.  Fold in whipped topping. 

  

2. Spread in crust.  Refridgerate overnight or a minimum of 2 hours. 

  

Servings: 8  Calories per serving: 147

100 calorie chocolate treat

Pudding in a Cloud  

  • 2 cups thawed Cool Whip Lite whipped topping
  • 2 cups cold fat-free milk
  • 1 pkg. (4-serving size) JELL-O chocolate flavor fat free, sugar free, instant reduced-calorie pudding and pie filling
Spoon 1/3 cup of the whipped topping into each of 6 dessert dishes.

Using back of spoon, spread whipped topping onto bottom and up side of each dish.

Pour milk into medium bowl. Add pudding mix. Beat with wire whisk 2 minutes or until well blended. Spoon evenly into center of whipped topping. Refrigerate 1 hour or until ready to serve. Store leftover desserts in refrigerator.

Kashi cookies

I just tried this today they are so good. 

  

1/2 cup of splenda 

1/2 cup brown splenda 

1 cup of FF or LF margarine ( I used smart balance margarine) 

1 tsp vanilla 

2 eggs 

2 tsp Cinnamon 

1 tsp baking soda 

1/2 tsp salt 

1/2 cup raisins 

2 1/4 cup WW flour 

1 cup Kashi go lean crunch cereal 

  

Mix all together, spoon onto cookie sheet, bake at 375 for approx 10 min

Rutabaga Fries

4 rutabagas, cut into steak fries ( I found that 1 and 1/4 was enough to feed my family)    Serves 4 

1 tablespoon olive oil 

1/2 teaspoon garlic powder 

salt and pepper to taste 

  

Preheat oven to 425 degrees 

In a bowl, toss together the rutabagas, olive oil, garlic powder, and salt and pepper to taste. 

Lay pieces out on a cookie sheet or jelly-roll pan, not touching.  Bake for about 15-20 minutes on one side till browned; turn over and bake for another 15-20 minutes on the other side. Fries are done when tender on the inside and nicely browned on the outside.

Cajun Chops

Serves 4 

1 tablespoon paprika 

1/2 teaspoon onion powder 

1 teaspoon rubbed sage 

1/2 teaspoon cayenne pepper 

salt and pepper to taste (about 1/2 teaspoon each) 

1/2 teaspoon garlic powder 

4 pork chops, 1/2 inch thick 

1 teaspoon butter 

1 teaspoon olive oil 

  

In a small bowl, combine seasonings. Sprinkle one side of chops heavily with the spice mixture. Heat butter and oil on high heat. Add chops with spiced side down. Sprinkle remaining spice mixture on the chops. Turn down heat to medium. Cook for 4-8 minutes on each side. 

  

They will turn very brown but are very tasty.

Sesame Shrimp

Serves 4 

  

1 tablespoon vegetable oil, divided 

5 cloves garlic, pressed 

1 cup mushrooms, sliced 

1/4 cup low-sodium soy sauce 

2 tablespoons sesame oil 

1 tablespoon brown sugar 

2 tablespoons toasted sesame seeds 

1 bunch green oinions, chopped 

1 pound frozen medium shrimp, thawed (buy already cooked) 

2 cups green beans, steamed 

  

In a skillet or wok, heat half the oil over medium-high heat, then add the garlic and mushrooms. Saute for 3-4 minutes. Now add the soy sauce, sesame oil brown sugar, toasted sesame seeds and green onions. Simmer for 3-5 minutes. Add green beans and shrimp to the sauce and cook for another 5-8 minutes. 

  

Per serving; 14g fat;26g protein'12g carbohydrate'3g dietary fiber; 173mg cholesterol;776mg sodium 

  

YUMMY!!!!

ww bread

100%  Whole Wheat bread for Bread Machine 

  

1 1/2 tsp. active dry yeast 

3 cups ww flour 

1 1/2 tsp salt 

1 1/2 tsp white sugar 

1 1/2 tbsp. nonfat dry milk powder 

1 1/2 tbsp marg. 

1 1/2 cups warm water. 

  

Place ingredients in bread pan as suggested by manufacturer.  Select WW or Basic setting.  press start.

I don't have a bread machine

FF/SF Egg-Nog

In a medium bowl, combine 2 cups skim milk with one 1-ounce package instant sugar-free vanilla pudding mix. Stir well until thickened. Add 2 more cups skim milk and 1 cup egg substitute (like Egg Beaters); mix well. Stir in 2 to 3 teaspoons rum extract, 1/8 teaspoon salt and 1/4 teaspoon ground nutmeg until the mixture is well-blended, smooth and coats a spoon. Refrigerate overnight. Serves 10.

Cook's Note: Add Splenda to taste if you like a sweeter nog. If it thickens too much, simply stir in more skim milk until it reaches your desired consistency.
