Chicken & Cabbage Lasagna

Boil or bake 3-4 chicken breasts 

Pull leaves off cabbage and wash 

Chop 1 large onion 

Prepare sauce, I make mine from no salt tomato sauce, stewed tomatoes, and favorite spices 

  

Shred chicken and add to sauce along with onions and spices cook 15 min or so on Med heat  

Layer sauce and cabbage leaves and FF or LF cheese and or LF cottage or ricotta cheese, keep layering. 

Cover with aluminum foil and bake for 45 min on 350 

  

I don't add both FF cheese and cottage cheese unless I have the extra dairy to do so.

A Circle of Friends Cookbook

                                               VEGETABLE CRAB SOUP

3/4 cup choped onion
2 teaspoons canole oil
3/4 cup chopped celery
3 cans {14 1/2 ounces each} diced tomatoes, undrained
4 cups of water
4 medium carots, sliced
1cup diced peeled potatoes
1 cup frozen corn
2 teaspoons reduced -sodium chicken bouillion granules
2 1/4 teaspoons seafod seasoning
1/4 teaspoon salt free lemon=-pepper seasoning
1 pound crabmeata cup frozen peas, thawed.

In a large sauce pan, saute onion in oil I omit oil and use cooking spray., saute for one minute
add celery, saute until tender.  Stir in tomatoes , water, carrots , potatoes, corn, bouillion, seafood
seasoning, and lemon -peper seasoning.Bring to a boil. Reduce heat: cove and simmer for 20-25 min.ar until veggies are tender. stir in crab and peas; heath  through.

makes 8 servings
1 2/3 cup servings  equals 167 cal. 5 garms of fiber 50 mil of chol.

A Circle of Friends Cookbook

                                                   
                                             TACO OVEN-FRIED CHICKEN

1/2 Cup fat-free milk               
1 tablespoon spicy brown mustard
1 tablespoon reduced-sodium soy sauce
1/2 teaspoon hot pepper sauce
1/2 teaspoon worcestershire sauce
1 garlic clove, minced
1/2 cup all-purpose flour
1 tablespoon reduced -sodium taco seasoning
1/2 teaspoon salt
1?2 pepper
4    boneless skinless chicken breast  4oz each or cut to equal 4oz.

In shallow bowl, combine the first six ingrediens. In another shallow bowl
, combine the flour, taco seasoning, salt, pepper. Dip chicken in milk
mixture, then roll in flour mixture.
Place in 15-20x 10-in. x1in. baking pan coated with nonstick cooking spray.
bake , uncovered at 350 deg. for 35-40 minutes or until chicken juices run clear.

Asparagus and Pea Casserole

In a Casserole dish  

   

1 Can of Drained Aspargus  

1 Can of Drained Peas  

1 Can of Cream of Mushroom Soup  

   

Place in Casserole dish the asparagus spead out.. then add the can of peas... then spread over top the soup.. bake at 350 til bubbling and done approx 30min.  Or Microwave for 10 minutes or until done.

Pita Pizzas

Whole Wheat Pita Bread  

1 Can of Tomato sauce  

1 package of cheese  

your choices of toppings  

   

Prepare like you would pizzas and bake at 350 until cheese is melted

Rice and Meat Gravy

2 Cups of Brown Rice (Prepared as on box directions) 

  

In skillet 

1-2lbs of lean ground beef or ground turkey  (browned and drained) 

  

Add to meat.. 

1-2 Cans of Cream of mushroom (depending on how much you want or how creamy) 

  

Stir over medium heat until cooked and boiling 

  

On plate put rice then top with meat gravy

Western Style Beef Stir Fry

1 tbs oil ( omit this) 

1 lb beef sirloin cut into small strips 

1 1lb pkg of american mixtures western style frozen potatoes, grrenbeans, onions, and red peppers 

  

2 tsp chili powder 

1/2 tsp cumin 

1/4 tsp garlic powder 

1/8 tsp pepper 

1/4 cup chopped fresh parsley 

  

Heat oil in skillet over medium heat until hot... add beef, cook and stir 5-6 minutes or until no longer pink... drain  

  

Add all remaining indgredients except parsley, stir to combine.  Reduce heat cover and simmer 6-8 min or until veggies are crisp and tender, stirring occasionally sprinkle with parsley

Ham Skillet Supper

3 Cups or 6oz of uncooked whole wheat egg noodles 

2 cups cubed cooked low fat or lean ham 

1 tbs minced onion 

1-1/2 cups milk 

1tsp worcertershire sauce 

1 15oz can cream style corn ( I sometimes just blend regular corn to avoid all the extra stuff) 

1 cup or 4 oz cubed american cheese 

  

In large skillet, combine all ingredients except cheese, mix well 

Bring to boil.  Cover simmer 18-20 minutes or until noodles are tender, stirring occasionally 

 
Stir in cheese, cook until cheese begins to melt. serve

cheesy mac Chili

1lb lean beef 

1/2 cup chopped onion 

1 15oz can of tomato sauce 

3/4 cup water 

1/2 cup finely chopped celery 

1/2 cup 2oz of whole wheat macaroni noodles 

2 tsp chili powder 

1 15oz can of red kidney beans undrained 

4 slices or 4oz of american cheese 

  

IN large skillet brown ground beef and drain... add onion and stir in tomato sauce , water, celery, macaroni and chili powder.  Bring to a boil reduce and cover and simmer 20-30 min or until celery and macaroni are tender 

  

Stir in kidney beans simmer until thoroughly heated.. spoon chili into serving bowls.. cut each cheese slice into 4 strips and arrange over top of chili
