ALL

TACO SALAD 

 

  • 1 lb. lean ground beef
  • Taco Seasoning
  • Lettuce Chopped
  • Tomatoes Chopped
  • Grated Low Fat cheese
  • Salsa

Brown ground beef and drain fat.  Add taco seasoning , salsa and simmer.  Mix altogether into a salad. 

 

I make my own taco seasoning using Oregano, Garlic, Paprika, Onion Powder, & Chili Powder (this cuts out the sodium from the Taco Seasoning packages)

Rotelle Chicken

6 Skinless chicken breast 

1 can rotelle chilies 

Fat free pepper jack cheese 

 

Lay chicken breast in baking dish, spoon rotelle chilies over each piece, pour juice over all chicken, bake at 350 for 30-45 minutes or until done, add pepper jack cheese over chicken and put back in oven until melted.

VEGETABLE SOUP

VEGETABLE SOUP (8 - 1 CUP SERVINGS -- 70 CALORIES PER SERVING)  

  

  • 3 Carrots, chopped
  • 1 Head Cabbage, shredded
  • 2 Stalks Celery, chopped
  • 1 Medium Onion, chopped
  • 1 c. Forzen Yellow Corn
  • 1/2 C. Frozen Green Bens
  • 2 t. Dried Sweet Basil (I dump in more, but that's personal preference)
  • 1 t. Dried Parsley
  • 1 28-oz can Tomatoes
  • 6 Low-Sodium Beef Bouillon Cubes, Dissolved in 6 cups boiling water
  • 1/4 t. pepper
  • 1/2 t. salt

Place vegetables and spices in a large pot with tomatoes and bouillon.  Bring to a boil and simmer, covered, until thick, about 45 minutes.    

  

This recipe is great for those watching their cholesterol - it has none!

Pasta free spahgeti

1 pound ground turkey 

1 medium onion 

1 can stewed tomatoes 

1 small can low sodium tomato sauce 

1/2 cup chopped mushrooms 

1tsp minced garlic 

Italian seasoning to taste 

pepper to taste 

garlic powder to taste 

FF mozzarella cheese (Optional) 

1/2 head of cauliflower or broccoli 

  

Brown ground turkey. drain fat add onion,stewed tomatoes,tomato sauce,mushrooms, garlic and spices, let simmer for 30 minutes. 

In separate pan, steam cauliflower or broccoli until desired texture.  Drain water off 

add to sauce mixture, simmer 5 minutes. 

top with FF mozzarella cheese (optional) 

This recipe is delicious, and you can add whatever veggies you like to it.

Cabbage Rolls

8 large cabbage leaves blanched  

1 cup shredded carrot  

1cup shredded zucchini  

1 cup french style green beans  

1 cup alfalfa or broccoli sprouts  

2 cups finely chopped firm tofu  

1 cup shredded fat free mozzarella cheese  

2 cups sugar free spaghetti sauce (I make my own)  

   

toss together all veggies with a small amount of fat free Italian dressing  

divide into 1/2 cup servings  

lay cabbage leaves flat and fill with veggie mixture  

top with 1/4 cup firm tofu and roll loosely  

lay seam side down in a greased cake pan  

cover with sugar free spaghetti sauce and cheese  

Bake at 350 degrees till cheese melts and sauce is bubbly, cheese may be added after sauce begins to bubble if you don't like your cheese browned.  

   

Veggies will be crisp tender, 2 roll ups is a serving. This is great for lunch or dinner and mimics stuffed shells. without the sauce and cheese it is like an egg roll.

FRUIT SMOOTHIE

FRUIT SMOOTHIE 

 

1/2 c. orange juice 

1 c. Frozen Mixed Fruit (peaches, grapes, pineapple, & strawberries) 

1/8 c. Frozen Cherries 

1/8 c. Frozen Blueberries 

1/8 c. Frozen Blackberries 

 

Place all in a blender and mix until a thick slush - I often add water to get it to the right consistency. 

 

If desired, you can add a little fat/free milk or yogurt.

Turkey smoked sausage & cabbage

This is a super easy recipe and only takes about 15 minutes. 

 

1 pound of smoked turkey sausage (Like polska kilbasa) 

1 head of cabbage 

1 med onion 

garlic power to taste 

pepper to taste 

 

Chop up sausage to bite size pieces, set aside. chop up cabbage and onions, put in large pot add sausage and cover with water..Let boil until cabbage and onions are done. 

 

This can also be done in a baking dish in the oven, just add less water.

Cheeseless Veggie Pizza

 

 

1 wholewheat pocket-less pita 

1 tsp. prepared pesto 

1/4 cup garlic & onion spagehtti sauce 

1 cup assorted grilled vegetables 

 

 

Top pita with pesto & spagehtti sauce.  Top with grilled vegetables. 

 

To reheat from frozen: Bake at 400 degrees until crisp and heated through, 10-15 minutes.

Hearty Entree Salad

  

4 oz grilled chicken 

3 1/2 cups assorted salad veggies 

3 tbs. sliced olives 

1/4 cup corn kernels or peas 

7 crumbled baked tortilla chips (optional) 

2 tbs fat free dressing

Apple-Bean Salad

  • 16 oz can dark red kidney beans
  • 2 apples cored and chopped (red delicious or granny smith works good)
  • 1/4 cup chopped green onions
  • 1/4 cup celery
  • 1/4 cup chopped mild green chillies
  • 3 tblsp. white wine vinegar
  • 3 tblsp. olive oil
  • 3/4 tsp. chili powder
  • 1/4 tsp salt

My cousin gave me this but I haven't tried it yet, so if anyone does, let me know how it tastes.
